Wonderful, healthy, wheat-free banana pancake recipe

• 2 large organic eggs
• 6 heaped tbsp. of gluten free portage oats
• 1 large banana
• Dash of almond or coconut milk
• Organic cold pressed coconut oil for frying
Suggested toppings
• Handful of raspberries
• Handful of blueberries
• Tbsp. of mixed seeds
• Flaked almonds
• Organic natural yogurt
• Organic maple syrup

This recipe is so simple and tastes so amazing it’s perfect for a Sunday morning breakfast or a healthy pudding treat. Just need to pop all the pancake ingredients in a blender and blend until smooth, if it’s too thick add a little more almond milk. But a teaspoon of coconut in a frying pan on full until hot and poor in your mixture and cook each side of your pancake until golden brown (approx. 1 min each side) , this recipe should make 6 small or 2 large pancakes. Then just before you serve add natural yogurt, your favourite fruit and a little maple syrup, you shouldn’t need much at the banana in the batter adds its own natural sweetness, enjoy 🙂
