Zoodles – Healthy alternative to noodles
Zoodles a great way to stay healthy but have great tasting food.
Spicy warm zoodle salad recipe (serves 2)
1. One onion
2. One chilli
3. Two cloves of garlic
4. A hand full of nuts (peanuts, almond, cashews are great)
5. 2 cups of vegetables (I used leak, broccoli)
6. 2 cups Butternut squash zoodles
7. Coconut oil to fry with
8. Small bunch Coriander
1. Juice and zest of one lemon or lime
2. 1 tbsp. virgin olive oil
3. 1 tsp of Tauzin
4. Salt and pepper
Chop up all your vegetables first in to bite size pieces so your all ready to go. Then put all the ingredients for the dressing to a bowl and give a quick whisk with a folk and leave to stand. Next in your wok or frying pan put a tsp. of coconut oil in and put the heat on full, when hot pop in your nuts and quickly fry until brown, this will take no more than a minute of 2 so make sure you don’t burn them.
Once the nuts are ready take out of the pan and leave to cool. Put another tsp. coconut oil in the pan and put the chopped onions in to fry. After 2 mins add the rest of the vegetables chilli garlic and stir fry for 3 mins then turn the heat down to medium and add the zoodles and fry for a further 2 mins or until your vegetables are cooked to your liking.
Pop in to bowls add on top your roasted nuts, fresh coriander and then drizzle your dressing over the top perfect for a healthy lunch, also great with a fried or boiled egg. Hope you enjoy 😉
